This candied popcorn is delicious and very easy to make.  Put it in treat bags with a fun label and give them to your Halloween party goers.

You can easily cut this recipe in half if you don't want to make as much.  Or use a half recipe with the full amount of popcorn if you prefer only a light sugar coating on your popcorn.

16-20 cups popped popcorn (this is the equivalent of approx. two bags of microwave popcorn)
1 cup butter (if you use salted butter, omit salt in recipe)
2 cups white granulated sugar
1/2 cup corn syrup (light or dark)
1 tsp salt (I omitted this in my recipe because the popcorn I used was lightly salted and I used salted butter)
1 tsp vanilla extract
Green food colouring
2 tsp baking soda

Prepare two large baking trays with rims by greasing them lightly or covering them with aluminum foil (lightly greased).  
Spread popped popcorn between the two trays, it is okay if the popcorn is not in a single layer. Set aside.

Melt the butter in a large saucepan over medium/high heat, stir in the sugar and corn syrup (and salt if using).  Continue to stir until mixture boils.  Stop stirring and cook for an additional 4 minutes.
Remove from the heat and stir in vanilla and food colour.  Stir in the baking soda.  The mixture will (should) foam up to almost double the volume.  If it doesn't put it back on the heat for a few seconds and stir until it does.  Remove from the heat and immediately pour over the trays of prepared popcorn.  Stir the popcorn to coat the pieces.  The coating will start to solidify and you may wonder how the popcorn will get coated.  That's Ok!!
Put the trays in the oven at 250F for one hour.  Every fifteen minutes during that hour, stir the popcorn, the pieces with begin to get coated evenly during this time.
After an hour, remove from the oven and allow to cool for five minutes.  Break apart into small pieces and enjoy! Store in airtight containers or bags.
