Mrs. Bell's Sprite ¾ Pound Cake
Preheat oven to 325 degrees F
Stand alone OR hand mixer
Bundt pan (floured and buttered)


Ingredients for the Cake


3 cups cake flour AND 1/8 teaspoonful salt (stir together and set aside)
3 cups granulated sugar
3 sticks butter (room temperature)
5 large eggs (room temperature
1 large lemon (zested) (yields about 1 Tablespoonful zest; use 2 teaspoonfuls for the cake and 1 teaspoonful for the glaze)
2 teaspoonfuls lemon juice (from the lemon)
1 Tablespoonful vanilla
1 cup Sprite OR 7-UP (NO SUGAR FREE)


Ingredients for the Glaze:
2+1/4  cups confectioners' sugar
1-2 Tablespoonfuls milk
Remaining zest and juice from lemon
1 teaspoonful vanilla


Instructions for the Cake:


Beat together butter and sugar on medium speed for (about 7 minutes) (Scrape down!)
Add one egg at a time and beat together on low speed until all are incorporated
Stir in zest, juice, and vanilla until all combined  (Scrape down)
Stir in the flour/salt mixture (about 1/3)  and alternate with the Sprite or 7-UP until all combined; scoop into the pan and bake for about 1 hour and 20 minutes
Remove from the oven and set aside to cool


Instructions for the Glaze:


Stir together confectioners' sugar and just enough milk and lemon juice for desired consistency, stir in the lemon zest and drizzle over the cooled cake!
