Preparation of Kadhi

Ingredients:

1. Curd – 3 Cups
2. Gram Flour (Besan) – 2 Cups
3. Garlic Cloves – 10 to 12
4. Green Chillies – 7
5. Curry Leaves – Handful
6. Chopped Coriander – ½ Bunch
7. Cumin Powder (Zeera Powder) – 1 Teaspoon
8. Coriander powder (Dhaniya Powder) – 1 Teaspoon
9. Turmeric Powder – 1 Teaspoon
10. Salt – 1 ½  Teaspoons

In an empty bowl add curd, besan (gramflour), garlic cloves, salt, cumin powder, coriander powder, curry leaves, chopped coriander, green chillies and turmeric powder.

Mix them well and grind this mixture into a fine paste.

In a cooking sauce pan, sieve the paste of curd and besan. Add 5 cups of water and cook for 10 minutes.

Keep stirring to prevent the formation of lumps.

For Bhajyas

Ingredients:
1. Gramflour or Besan – 3 Cups
2. Ginger Garlic paste – 1 Teaspoon
3. Red Chilli Powder – 1 ½ Teaspoon
4. Salt – ½ Teaspoon
5. Turmeric Powder - ¼ Teaspoon
6. Cooking Soda – 2 Pinches
7. Water – 2 Cups

Into an empty bowl add gramflour, ginger garlic paste, salt, red chilli powder, turmeric powder, cooking oda and two cups of water.

Mix it well and keep this mixture aside for 15 minutes.

Mix and spread these Bhajyas into the frying pan when oil is hot.
Fry till golden brown.

Add these Bhajyas to the cooked besan and curd paste or kadhi.

For tempering

Ingredients:

1. Cumin seeds or Zeera -1 teaspoon
2. Mustard seeds or Rai - 1 teaspoon
3. Dry red chillies – 6
4. Garlic cloves – 8
5. Curry leaves – Handful
6. Cooking Oil – 2 Tablespoon

Add 2 tablespoonful of oil into a frying pan.
Add cumin seeds when oil is hot, add garlic cloves, dry red chillies, switch off the flame and then add curry leaves.

Give tadka to dahi ki kadhi and close the lid.

This delicious Dahi Ki Kadhi is ready to be served. Enjoy with dry Bhajiyas and Tala Hua Gosht (fried mutton).
