Long and slow cooking is the only SECRET. It is cooked in a very rustic style and there is no real and set recipe for a staff curry. Recipe Serves 3-4 1kg lamb curry cuts on the bone/boneless 2-3 tbsp vegetable oil/ghee 4 black cardamoms 7-8 cloves 2 inches of cinnamon stick 3 onions thinly sliced 4 garlic cloves (chopped) 1 tbsp fresh ginger (chopped) 3 tomatoes (chopped) 1 tbsp coriander powder 2 tsp cumin powder 2 tsp Kashmiri red chilli powder 2 tsp turmeric powder 3 tsp garam masala powder Salt to taste Hot water(as required) 2 green chillies 1 tbsp fresh coriander (chopped) Juliennes of ginger
