Apricot is a popular fruit in during the summer and in a cake it tastes delicious. Apricot cake is quite a popular dessert in Northern Europe and in German known as Aprikosenkuchen, is rich in taste especially with the number of eggs that go into it. Here is our recipe on how to make apricot cake.

Prep Time: 30mins
Baking Time: 60mins
Total Time: 90mins + cooling time.

Ingredients:
650-750g fresh apricots
Juice of half a lime/lemon
250g plain flour
3tsp baking powder
Pinch of salt
1tsp cinnamon powder
100g caster sugar
115g softened butter
4 eggs
1tsp vanilla extract/essence
Handful of flaked almonds
