Chekdirme is one of the famous local dishes of Golestan province and Bandare Torkaman, which is a very tasty dish made from rice, fresh mutton, tomato paste, onion and various spices. Also, meat burek is similar to meat piroshki, which is also one of the most popular dishes in Bandare Torkaman. But before making the chekdirme and Burek, we went to Bandar-e-Torkaman livestock market to get the lamb we needed.
This market is held here every Monday and all kinds of live animals such as sheep, cows, lambs, goats, donkeys and calves are bought and sold. We got the lamb we needed and went to make the famous chekdirme.
To prepare the chekdirme, the fresh mutton that we had bought was fried in a kazan and then onion and tomato paste was added to it. After the meat is ready, the meat is emptied and water is poured into it and then the rice is added and left to simmer in the water.
When the rice is ready, it is served in a tray and the meat is put on the rice and I must say that Bandar Torkaman's Chekdirme was one of the most delicious dishes I have ate in a long time. As for the Bandar Turkmen burek, I have to say that it is one of the traditional and old dishes of Bandar Torkaman, which is a bit like a piroshki. First they prepare the dough and then they dip it in flour and then they add the minced mutton, which was already fried with onion, black pepper and salt, in the middle of the dough and close it and fry it in hot oil, which was very tasty.
