Pinto Beans in the Pressure Cooker

This is a simple recipe. Use these beans to make charro beans or refried beans or simply enjoy them as is.

1 lb of dry pinto beans
1/2 an onion
4-6 cloves garlic
1/2 tsp salt
8 cups of water

1. Add all of your ingredients to a pressure cooker.
2. Close the lid and make sure it locks. Close your steam release valve.
3. Set the pressure cooker to high pressure and cook beans for 40 minutes. Allow for a natural pressure release. About 15 minutes.
4. Turn the valve to release the steam from your pressure cooker. Once the pin has dropped you can open the lid. Remove onion and garlic.

Now to make our charro beans! Remove beans from the pressure cooker and place them to the side. We will be using the same pot. No need to wash It right now.

Ingredients:

1 lb of cooked pinto beans
6 strips of chopped bacon
4 hotdog links (optional)
1/2 a small link of chorizo Mexicano (optional)
1/2 cup diced onion
1 or 2 diced serrano or jalapeno peppers
2 diced tomatoes
2 cloves minced garlic
1/2 tsp ground cumin
2 tsp tomato chicken bouillon
15 stems of chopped cilantro
salt and pepper to taste
