During the hottest days of summer in Korea which we call Boknal, we usually enjoy special food to supplement our energy.
Among many, Samgyetang, a special Korean traditional dish of boiled chicken, is one the most popular menu for Koreans to eat on Boknal.
Today, I am sharing a simple and less heat applied
dish which would stimulate your appetite on a hot summer day!

It's Chiken Breast Salad!!
And a sauce made of mustard and garlic
would give you a pungent and refreshing flavor.

[RECIPES] yield; 2 servings

Ingredients
1 (130g) chicken breast, filleted
1T rice wine
salt and pepper t.t
1/2 (80g) cucumber, sliced
1/4 (40g) onion, sliced
1/4 red and yellow paprika, sliced
1 tomato, halved, sliced
cooking oil, as needed

mustard garlic sauce)
mild mustard 1/2T, minced garlic 1T, natural sugar 1/2T, soy sauce 1t, vinegar 1 1/2T, yuja extract 1/2T(optional), salt 1/3t

Preparation
1. Season the chicken breast with rice wine, salt and pepper. Cook in a heated pan with oil until golden brown; Torn into pieces with hands.
2. In a bowl, combine all the ingredients to create the sauce.
3. Combine all the vegetables and chicnek breast with the sauce.
4. On a serving dish, place the tomatoes and serve the chicken breast salad.
