(1 round 18cm * 7cm fan)

* Double Berry Jam

150 g raspberries
70 g strawberries
120g sugar
10 g lemon juice

* Side decoration
58g Unsalted butter
4 g Vegetable oil
45g Sugar Powder
35g Egg white
Cake flour (A) 28 g
Cake flour (B) 22g + Cocoa powder 6g

* Chocolate biscuit
Egg Yolks 80g
30 g sugar
Vanilla Extract  5ml

Egg white 170 g
90 g sugar

Cake flour 105g
Cocoa powder 10g

Unsalted butter 20 g

* Chocolate mocha fresh cream
100 g white chocolate
90g milk chocolate
70g dark chocolate

160g fresh cream
15g Cacao nib
Instant coffee 4 g
300g Cold fresh cream
1/4 tsp Coffee extract (optional)

85g whipped cream
8 g sugar


* Syrup
35 g sugar
50 g of water
5ml  Kahlua  (or rum, or 1 / 2sp of instant coffee)
How to make ㅡ ㅡ ㅡ ㅡ ㅡ
By measuring water and sugar
Melt sugar in the microwave.
Mix with kalua and let cool to room temperature.
