Fat Cat is back with a step by step guide to making a rich and creamy New York Cheesecake with sour cream topping using an air fryer. It is easy to make and tastes so delicious. Remember to bake this in advance as it requires chilling in the fridge for at least 6 hours. Hope you enjoy this easy baked New York Cheesecake air fryer recipe!

Things to note:
1. All ingredients to be at room temperature.
2. Mix the ingredients for the filling until just combined so as not to incorporate too much air into the batter.
3. Mix the ingredients for the sour cream topping until just combined, don’t make it too liquid.
4. It is recommended to add lemon juice in the sour cream topping to give a more citrus/ freshness taste.
5. As we are using an air fryer instead of an oven to bake the New York Cheesecake, there might be some cracks on the cake. But don’t worry, you can cover the top with sour cream topping, making the appearance nicer and taste better.
6. Wrap the cake pan with a piece of wet towel to speed up the cooling process.
7. When demoulding, slide the spatula around the sides of the cake pan to loosen it. I didn’t manage to slide it very well and hence the sides of the cake didn’t appear so nice 😅
8. If you prefer a really dense and rich New York cheesecake, you can skip the sour cream and whipping cream for the filling. I’ve tried that and it’s quite heavy. Do note that it will also give you a cake that is slightly shorter in height.
9. The cheesecake can be kept in the fridge for up to 5 days.

Here’s the ingredients:

Pan size: 6 inch cake pan with removable bottom or springform pan

Cake crust:
5 pcs (84g) digestive biscuits
45g unsalted butter (melted)

Filling:
250g cream cheese (softened at room temperature)
45g icing sugar
30g sour cream
1 tsp lemon juice
1 tsp vanilla extract
2 eggs (110g to 120g, at room temperature)
80g whipping cream
55g unsalted butter (melted)

Sour cream topping:
100g sour cream (room temperature)
10g icing sugar
¼ tsp vanilla extract or 4 tsp lemon juice (recommend adding lemon juice if you have for a more citrus/ freshness taste)
