CHEWY & CRUNCHY ANZAC Biscuits. 2 Secret Ingredients.

1 cup Rolled Oats
1/2 cup caster sugar
3/4 cup Desiccated Coconut
150g Nutelex
2 tbsp golden syrup or treacle
1 1/2 tbsp water
1/2 tsp Bicarbonate Soda
Sugar to sprinkle

Step 1:
Preheat your oven to 180C (350F) and line baking trays with non-stick baking paper.

Step 2:
In a small saucepan, combine golden syrup and Nuttelex over low heat, stirring until fully melted. In a separate bowl, mix the bicarb soda with 1 1/2 tablespoons of water. Add the bicarb soda mixture to the golden syrup mixture and stir until it bubbles. Remove from the heat.

Step 3:
In a large bowl, combine flour, oats, sugar, and coconut. Pour the golden syrup mixture into the dry ingredients and stir until fully combined. Roll tablespoonfuls of mixture into balls and place them on the lined baking trays, pressing down on the tops to flatten them slightly.

Step 4:
Bake the Anzac biscuits in the preheated oven for 20 minutes or until golden brown. Remove from the oven and let them cool on the trays for a few minutes before transferring to a wire rack to cool completely.
