Cold Soba Dipping Noodles 🍜

Today is so hot in CA, make this!

(Zaru Soba) this noodle dish is perfect for the summertime. I know traditionally we may view noodles as being served hot. But, have you tried it served cold?!

The noodles are made from buckwheat noodles and served with a soy based “dipping” sauce that is chilled.

What you’ll need:
1 bunch soba noodles

For the Dashi -
3 cups water
5-6 small pieces of Kombu (dried seaweed)
Handful of bonito flakes ~ 3/4-1 cup
Salt to taste
1 tsp honey (I do this to give a slight sweetness)
4-5 Charred green onion ends

For the Dipping Sauce -
1 cup Dashi broth
4 Tbsp light soy sauce
4 Tbsp mirin
1 minced garlic paste
Handful of green onions to taste
Sweetener (optional)
Handful of ice

For the toppings -
Green onions
Nori
Togarashi
Wasabi
Fried shallots (I add this) for extra flavor
