* 2 lb beef shank
* 6-7 scallions
* ginger
* 6 star anise
* 1/4 C canola oil
* 7 cloves garlic
* 2 red chiles
* 1 medium sweet onion
* 4 pcs small sized rock sugar
* 2 T spicy bean paste (dou ban jiang)
* 1/3 C dark soy sauce
* 1/3 C light soy sauce
* 1/3 C Chinese cooking wine
* 1 large tomato
* 1 t salt
* 1 t white pepper
* 3 dried bay leaves
* taiwanese dried noodles
* bok choy or shanghai tips
