Instead of sending what's left
Instead of sending what's left of Mr Turkey off to the trash heap once Thanksgiving dinner is done, turn those bones and leftover bits of bird into a delicious and simple soup.
Turkey Stock Ingredients
1 Turkey Carcass
10-15 Peppercorns
1 Bay Leaf
1 tsp Salt
1 tsp Pepper
1 Medium Onion quartered
2 Carrots rough chopped
2 Celery Stalks rough chopped
Soup Ingredients
Turkey Stock In Large Pot
1 1/2 cups Carrots peeled and chopped
1/4 cup Scallions (pale section) chopped
1 1/2 cups Celery chopped
1 TBSP Garlic minced
2 tsp Poultry Seasoning
2-3 cups leftover Turkey in bite size pieces
3 cups Egg Noodles
Chopped Scallions To Garnish
