Sooji ka Halwa is a
Sooji ka Halwa is a sweet semolina recipe. It is characterized by its roasted aroma with a fine taste of ghee and spices. Kids absolutely love it. For special occasions, such as Diwali, Eid or iftar, it is often topped with raisins, almonds and pistachios, or even with silver vark.
The quality of ghee is crucial for this Indian semolina dessert, which can be found in very similar variants in the Orient to Greece.
Ingredients for 4 small servings:
75g semolina
4 tbsp ghee (50g) (recipe: • Ghee - einfach selbst machen | Butter... )
20g Goor or Jaggery (buy: amzn.to/2Wivrc0 *)
20g raw cane sugar
200ml water
1 Indian bay leaf (buy: amzn.to/3ffbGLh *)
2 cardamom capsules (buy: amzn.to/2KSwhH9 *)
10g pistachios
10g almond
20g raisins
Preparation:
1. Heat the ghee and roast the bay leaf and cardamom for 30 seconds. Then add the semolina and turn on medium flame and roast for about 10 minutes, stirring constantly until the semolina takes on a light color and smells pleasantly nutty. (Tip: smell it at the beginning and smell and compare it after 10 minutes.)
2. Then add nuts and raisins and roast for another 2 minutes.
3. Add sugar and goor and stir in for 1 min. Provides additional caramel effect.
4. Then add water and boil for 1 min. Until the mass thickens. You can adjust the consistency as your liking.
