Thanks for stopping by, in this video will be making Rogan Josh. This is a no onion, no tomato, and no yogurt version of this very famous dish. We have Hing, Kashmiri chili powder, saffron, fennel powder, ginger powder, and much more. You can also add black cardamon and mace to this curry. Rogan josh is an aromatic lamb dish of Persian origin, which is one of the signature recipes of Kashmiri cuisine. Rogan means "oil" in Persian, while josh means "heat, hot, boiling, or passionate". Rogan josh thus means cooked in oil at intense heat. Another interpretation of the name rogan josh is derived from the word Rogan meaning "red color" and josh meaning passion or heat. Rogan josh was brought to Kashmir by the Mughals, whose cuisine was in turn influenced by Persian cuisine. The unrelenting summer heat of the Indian plains took the Mughals frequently to Kashmir, which has a cooler climate because of its altitude. Hing or asafoetida - Hing is made from the dried resin of a giant-fennel plant. It is essential to Indian cooking and pleasantly aromatic and pungent raw. It becomes mellow and garlicky when cooked in ghee. This hing powder is 8-10 times stronger than most compound hing powder sold in grocery stores. It comes from the dried resin of a plant from the fennel family.
