PUMPKIN ALFREDO PASTA BAKE

In this video I will be sharing with you how to make a savory, mouth watering pasta bake that includes a pumpkin alfredo sauce. This recipe is vegan & gluten free but if ya don’t tell anyone they will never know ;) hopefully you can add this recipe to one of your week night shuffle or your thanksgiving sides.

WHAT YOU’LL NEED
-1 cup chopped mushrooms
-1 cup chopped onion
-1 tablespoon garlic
-1/4 cup pumpkin purée
-1 & 1/2 cups vegan mayo
-1/4 cup nutritional yeast
-1/2 cup unsweetened coconut milk
-Italian seasonings, salt, pepper,  
-1 tablespoons vegan chicken stock base
-1/3 fresh basil
-GF bread crumbs
