YOU NEVER HAD A BIRRIA TACO?! You lied! This is hands-down my new favorite taco!!! In this recipe, I'm going to show you How to Make Birria Tacos at Home. No need to feel intimidated as I did. Hike up those trousers it's time to braise some beef and get our hands and faces messy! I think that's what I love most about these tacos they are so delicious I don't mind the mess!

INGREDIENTS:
1-2 lbs chuck roast, cut into thick 6 inch pieces
2 Ancho chilies
8 Japones Chilies, or Arbol Chilies
1 can Chipolte Chilies in Adobe Sauce
2 tbsp tomato paste
2 tbsp brown sugar
1 cinnamon stick
1 yellow onion
2 cups of beef broth
8 cloves of garlic, whole or 2 tbsp garlic paste/minced
3-6 Bay leaves
salt and pepper to taste
garlic powder
onion powder
½ tsp oregano or marjoram (if you have it)
1 tsp thyme
1 tsp cumin
1 tsp chipotle chile powder
8 oz of Monterey Jack and Mozzarella
Cilantro
