INGREDIENTS
1 tablespoons butter
1 dozen eggs
1 lb fresh Chorizo

PREPARATION
1. Brown chorizo over medium heat, once browned, set aside in separate bowl lined with paper towel
2. Whisk eggs until well blended
3. Heat non-stick pan on medium
4. Add butter and eggs to pan
5. With a spatula, stir egg mixture constantly, being sure it doesn’t stick to pan
6. Once eggs are firm but still have a creamy and moist texture they are ready to combine with Chorizo
