350g basmati rice
2 onions
1 green pepper
1 red pepper
1 aubergine
2 tomatoes
2 heaped tbs tomato purée
Oil
Salt and pepper

Wash the rice thoroughly and soak for 10 minutes.
Slice the peppers, aubergine and 1 1/2 onions, chop the other half for the rice.
Warm 1tbs of oil in a large pan and fry the chopped onion until soft, add the tomato paste and fry with the onion for 30 seconds drain the rice and add to the pan frying for a couple of minutes, add 2 tsp of salt and cover with boiling water, 2cm above the rice.
When the water starts bubbling cover and turn the heat down to med low for 15 mins.
While the rice is cooking , fry the onion slices, pepper slices and aubergine slices but not the tomatoes.
Layer the vegetables in a pan, add the cooked rice. Put the pan on a low heat for about 20 mins. When ready to serve put a large serving platter on top of the pan and flip onto the serving platter.
