Guinea pig is an important ancient food in Andean indigenous cultures and has a high protein content. Cultures around the world eat various types of animals so there is no reason to be amazed that Ecuadorians eat guinea pigs or as they call it "Cuy."

Technically, cuy are rodents and they are a traditional dish in some Latin American countries including Colombia, Peru and Bolivia. In Ecuador, you can see roadside barbecues with cuy spinning slowly on a spit over hot coals alongside whole pigs (lechon) and chickens (pollo asado al carbon), which are also delicious.  The cuy are cooked similar to lechon so the skin becomes a crunchy highlight.
