Our kids really love the peppery Teochew-style Bak Kut Teh we get in Singapore. Whenever we make it, they'll drench their entire bowl of rice with the steaming hot peppery, meaty broth, and just devour everything! As always, use top quality ingredients. If you can, try and get fresh non-frozen pork from your butcher. It makes a world of difference. Great pork will have a sweet, mild meaty flavour with a good balance of meat and fat. If it has a strong "porky" smell or flavour, something ain't right. Next, try and make sure all your ribs come from the same animal. This is super important. This way you will get a consistent texture and taste with each piece. Spices. In the video, we use a pre-prepared bag of white peppercorns which we can conveniently get in Singapore - it's just crushed peppercorns inside. Our recipe recommends half a cup of whole white peppercorns (which brings the heat level pretty high), but depending on your comfort level with spicy stuff, feel free to adjust downward...or upward if you're a sucker for punishment. Optional, but we also used a couple of cloves... And if you want a more exotic flavour, feel free to chuck a corner of star anise in! We've tried many different cooking methods for this dish...everything from ultra tender fall-off-the-bone rib meat to chewy just-cooked ribs... and we've found the best balance at the point where you get the rib meat fork tender and with a firm-ish, meaty bite. Cooking times and fire control are of utmost importance here. For the fresh Indonesian pork we get from our butcher in Singapore, we've found the "25+25min" timing works brilliantly! So cook your ribs for 25 minutes on a vigorous boil, then turn the fire off, and with the lid on, leave the ribs to steep and relax in the hot broth for another 25 minutes. Once you get the method and timing right, you're on your way to an amazing dish of Bak Kut Teh! And when you get it right, this is one dish to whip up on one of those cool rainy nights to keep you warm ! Enjoy!
