Béchamel or white sauce is one of the classic French “mother sauces” that form the basis of much French cuisine. Béchamel is perhaps the most used mother sauce for home cooks.
White sauce is not terribly tricky, but it wants you to pay attention to it since it can go from white to brown quickly. It adds a creamy, richness, and complexity to almost any dish and can be used as a base for many other sauces! Enjoy!

Ingredients: - 120 gr. all-purpose flour
                     - 100 gr. butter
                     - 1 Lt. whole milk
                     - Grated nutmeg to your taste
                     - Salt to taste

Additional Tip:
* It is often used in gratins and with baked vegetables.
* It can dress up into a pasta sauce with a little extra liquid and some herbs.
* To cool this sauce for later use, cover it with wax paper or pour few pieces of butter over it to prevent skin from forming.
* Leftover béchamel can be stored in an airtight container in the refrigerator for up to 5 days. Reheat over very low heat on the stovetop.
