Uni aka Sea Urchin is a delicacy that is enjoyed around the world.  In this video, I will show you how to make this SPECTACULAR Uni Pasta dish with Udon noodles.  I was cooking a little dinner party last night and I HAD to sneak a camera in the kitchen to show this dish to you guys!  Haha...don't tell anyone.  Uni is the innards of a sea urchin.  I KNOW it sounds weird, but there are weirder things out there!  This particular tray of uni comes from Hokkaido, Japan.  

The seafood from this part of the world is, in my opinion, one of if not THE best.  The deep and cold waters in which they harvest the food creates a very firm texture and incredibly clean flavors.  And because the water is so cold, these creatures contain a higher fat content.  We all know, fat is flavor!

Uni Pasta Recipe:
95 g Japanese dried udon noodles
20 g diced shallots
70 mL dry white wine
200 mL heavy cream
10 g shaved parmesan
fresh cracked black pepper
thinly sliced scallions for garnish
