Another one to add to your list of quick and easy dinner recipes! This easy and healthy 10 minute spinach soup is sure to become a regular in your meal rotation.

SPINACH SOUP
1lb fresh spinach
2T butter
6 to 8 scallions, finely chopped
1 clove garlic, crushed
1T flour
6c chicken broth
salt and pepper to taste
1/2c parmesan cheese

Remove any heavy stems from spinach and shred into small pieces. In a saucepan, sauté scallions in melted butter and add garlic. Add spinach, cover and steam for a couple of minutes until it is wilted but still bright green. Stir in flour. Add chicken broth and simmer for 5 minutes. Add salt and pepper to taste. Serve with grated parmesan cheese.
