Chicken and chorizo tray bake | Simple chicken recipe
Some of the best recipes are the ones that take the least amount of effort, but give you the biggest return. this is one of those recipes. Chicken and chorizo is one of those flavour combos that just works well. For this recipe i'm going to combine the 2 with peppers, olives, some red onion and herbs, to create a simple chicken recipe that not only ticks all the boxes flavour wise, but saves on washing up!
You'll notice that I didn't technically use a tray for this 'traybake', but that's just down to the fact I only made enough for 2 people (both of those people being me of course!) so feel free to scale it up for a larger crowd, and just transfer everything to a large roasting tray.
To make my Chicken and chorizo traybake you will need:
For 2 people
►4 skin on chicken thighs
►About 15-20 green or black olives
►1 red bell pepper
►2 cloves of garlic
►1 red onion
►About 100g of chorizo
►About 100g of cherry tomatoes
►1/2 tsp of dried oregano
►Olive oil
►Squeeze of lemon to finish
►Salt & pepper
