Nigella Lawson Chicken & Chorizo Traybake

Nothing is more fabulous for a family feast that’s quick & easy to prepare and bung in the oven. It is also something the kids may eat, which is a chicken & chorizo traybake and here is one of my favourite recipes from Nigella Lawson Kitchen cook book. We’ve listed the ingredients below and there are so many recipes I did from that book, it was certainly well used over the period, it’s always been my go to recipe book for family entertaining 🙏❤️🌹🤗

This meal serves for 6 people so we doubled everything in case the older kids wanted to eat as well, once they get a chance to come away from their phones 📱

Ingredients we used are:
2-4 tbsp olive or sunflower oil
12 chicken thighs (bone in, skin on)
750g chorizo sausage, cut into 4cm cut into 4cm chunks
1kg new potatoes, washed & cut into half or quarter (depending on size)
2 large red onions, cut into thin wedges
2 tsp dried oregano
Grated zest if 1 large
Sea salt to taste

Gas mark 7 or equivalent for 1 hour, swap trays after 30 mins so the trays can cook evenly in the oven.
