Garlic confit is an absolute pleasure to eat. It is also a great way to consume it for all kinds of health benefits. How to make garlic confit in the oven -

Heat the oven to 300F (149 C)

Place peeled garlic cloves, fresh herbs (I used thyme) and two large pieces of lemon peel without the pith (optional) in an oven proof skillet or dish.  Do not pile up the garlic.

Cover everything with oil of choice (I used olive oil).

Place in oven and roast slowly for 90 to 120 minutes or until the garlic is lightly browned and soft.

Remove from oven and allow to cool down completely. Store in a closed container in the fridge for up to 2 months. You can also freeze it. Use by 2 months as well.
