Flatbreads are to be found and enjoyed throughout Italy, and here Enrica shares her recipe for 'crostoli' (that's the plural, the singular is crostolo). A key ingredient is the lard and the way they are made results in a lovely flaky flatbread. Here is the recipe:
500g 0, plain or all purpose flour
2 eggs
2 generous tablespoons lard plus more for smearing (in the UK, Pipers Farm is one of several online suppliers of decent, free range lard) Use room temperature unsalted butter if you cannot find lard.
2 tablespoons extra virgin olive
milk qb, around 100ml

Form a dough, roll out as Enrica shows, then chill the 'snails' before forming the flatbreads. If you don't have a bbq, either heat a well seasoned frying pan and 'dry fry' them, or place under a grill (broiler).
