If you like your pastries crunchy, cheesy and gooey, then this is the recipe for you! Sos Pitzudos belong to a family of fried pastries one finds in Sardinia, taking advantage of the islands pecorino cheese. Pierina's recipe is as follows
500g durum wheat flour
250ml warm water in which you've dissolved half a teaspoon of crystal salt.
For the filling:
2 large old potatoes, boiled and riced (you could bake them too for a fluffier texture)
500g fresh pecorino cheese, grated, salt if necessary.
Plenty of oil for frying - lard is really good for creating a crisp pastry and Pierina mixes it with sunflower oil.
They should be stacked then quartered for serving.
