Aloo Matar Gajar
Ingredients:
Oil 1/4 cup
Onion (chopped) 1 cup
Ginger garlic paste 1 tbsp
Red chili powder 1 ½ tbsp.
Turmeric powder 1/2 tsp
Coriander powder 1 tbsp
Salt 1 tsp
Tomato puree 1 cup
Potato cubes 2 cups
Peas 1 ½ cup
Hot water 1 cup + 1 cup
Carrot sliced 1 ½ cup
Dried fenugreek 1 tsp
Green coriander (chopped) for garnishing
Directions:
1. In a pot heat oil and add onion. Cook until translucent. Add ginger garlic paste and cook for a minute.
2. Add red chili powder, turmeric powder, coriander powder, salt and cook for another minute.
3. Add tomato puree and cook for 2-3 mins.
4. Add potatoes, peas and give them a good mix.
5. Add hot water and cover and cook until 80% done.
6. Now add carrots and mix them well. Add hot water and cover and cook for 8-10 mins or until fully done.
7. Lastly add dried fenugreek and mix it well.
8. Your Aloo Matar Gajar is ready. Serve and enjoy.
Prep time: 15-20 mins
Cooking time: 30-35 mins
Servings: 4-5
