Tamales and Pozole (Hominy) made from fresh Nixtamal have the best flavor and nothing can really compare to it. Nixtamalization is an ancient process & a true science dream. Time to cook with some science!

RECIPE INGREDIENTS & MEASUREMENTS:

Nixtamal: yields about 5.5lbs or (2500g)
1 1/3 cup Baking Soda (~318g)
12 cups Water (3 Quarts)
4 lbs White Dent Corn (~1814g)

Hominy/Pozole: yields about 2lbs (1220g)
4 cups Nixtamal (750g)
16 cups water (4 Quarts)

Basic Tamale Masa: yields 5lbs Masa (2267g)
1 lb Lard (~453g)
~14 cups Fresh Nixtamalized Corn Flour/Masa Harina (1755g)
1 tbsp. Baking Soda (15g)
4 tsp. Salt (~24g)
2 Cups Warm Water (500ml)


SUBSTITUTIONS:
Washing Soda (Sodium Carbonate): 5tbsp. (~45g) Pickling Lime/Slaked Lime (Calcium Hydroxide).
White Dent Corn: Field Corn & any varieties of Flint Corn are great substitutes and will each have their own unique tasty flavor. Blue Corn chips are actually made from Blue Corn which is a Flint Corn variety. :)
Lard: Vegetable Shortening
2 Cups of Water for Tamales: can be substituted for chicken broth, beef broth, pork broth, vegetable broth or even 1.5 cups (375ml) of any broth of your choice along with 1/2 cup (125ml) of a red chili sauce for even more flavorful tamale masa dough.

Recipe Notes:

Masa can be prepared in advance and wrapped tightly in a plastic bag before placing in the refrigerator. It will last about a week, but keep in mind that stored masa dries out so you will need to add more liquids and knead again, same as I did in my Tamale Recipe Video: How To Make Mexican Tamales - 10 Easy...

** Lye has a pH closer to 14 and is also commonly used in an alkaline solution for Nixtamalization.

*** When using an alkaline solution it’s very important to always use a stainless steel pot or one with enamel. Work in a well ventilated kitchen while the solution is heating and use gloves when handling.

**** If corn turns a bright neon orange it means you need to add a bit more of the same alkaline you’re using to the water to increase the pH of the alkaline solution.

***** After washing the Nixtamal and it’s still not as white as you would like you can place it back in a bowl filled with water and add 3 tbsp. (45g) of baking soda and let it rest at room temperature between 1 to 2 hours. Then rinse well again to remove the baking soda flavor.
