Keto: Parmesan Cauliflower Bites

Ingredients
1 small cauliflower
2 eggs
1 cup Parmesan cheese
8 tbsp almond flour
2 tbsp psyllium husk
3 slices bacon
2 tbsp green onion, chopped
1 Tsp smoked paprika
Garlic powder, salt, black pepper

Instructions
Fry bacon until crispy.
Cut the cauliflower into small florets. Boil for 10 minutes in salty water. Drain well and smashed it.
Add eggs, bacon, green onion, 4 tbsp almond flour, psyllium husk, salt, garlic powder, black pepper and Parmesan, mix well.
For Parmesan Breading: Mix together 4 tbsp almond flour, smoked paprika and 2 tbsp Parmesan.
Use a cookie spoon (1 1/2 tbsp) , make 30-35 cauliflower bites. Roll each bite in Parmesan breading and place onto a baking sheet, lined with parchment paper.
Bake for 15 minutes at 420F.
Or you can fry in a skillet. Cook for 3 minutes on medium heat, flip over and cook for 3 minutes on the other side.
Serve with the homemade tomato sauce.
