How to make Lemon cupcakes with Lemon curd filling and Italian Meringue Buttercream

------------------ Ingredients ------------------
160g - Plain Flour
2 Large Eggs
115ml - Oil
150g - Caster Sugar
120g - Greek Yogurt (hung curd)
1/2 tsp - Salt
1 tbsp - Lemon Juice
1 ¼ tsp - Baking Powder
1 tsp - Vanilla Extract
½ tsp - Baking Soda
Zest of 1 Lemon

0:27 Prep 1 - Pre-heat the oven
0:33 Step 1 - Whisk the eggs
0:49 Step 2 - Whisk in the oil & sugar

1:33 Step 4 - Sift & fold in the dry ingredients
2:01 Step 5 - Spoon the batter into the cupcake liners
