220g - Self Raising Flour
2 tsp - Baking Powder
¼ tsp - Salt
Egg Yolks - 4 Eggs
Egg Whites - 4 Eggs
160ml - Oil
1 tsp - Vanilla Extract
1 tbsp - Corn Syrup
200g (to 220g) - Caster Sugar/ Powdered Granulated Sugar

225g - Mascarpone Cheese
300ml - Double Cream
55g - Icing Sugar
1 tsp - Vanilla Extract

0:40 Prep 1 - Line & grease 2 baking tins
0:53 Prep 2 - Pre-heat the oven
0:59 Step 1 - Whisk Egg Whites & (half) Sugar
1:25 Step 2 - Whisk Egg Yolks, Vanilla Extract, Corn Syrup & (remaining) Sugar
1:46 Step 3 - Add Oil. Whisk
2:07 Step 4 - Sift in the dry ingredients. Whisk
2:29 Step 5 - Add 2 spoons of Egg Whites. Mix to loosen
2:50 Step 6 - Spoon in remaining Egg Whites. Gently fold
3:14 Step 7 - Spoon batter into tins. Bake in preheated oven
3:38 Step 8 - Remove when done. Tranfer to wire rack
3:57 Step 9 - Whisk Double Cream, Icing Sugar & Vanilla Extract
