Ingredients: 600 grams of sausages (pork or beef) 1 small onion 1 stick of celery 1 small carrot 3 cloves of garlic 1 tablespoon of curry powder (adjust to taste) 2 tablespoons of cornstarch (or flour for non-gluten-free option) 2 cups of chicken stock (or 2 cups of water with 2 teaspoons of chicken stock powder) 1 cup of peas 2 big tablespoons of cream Olive oil for cooking Salt and cracked black pepper to taste Optional: 1 peeled and grated apple Method: Boil the sausages in a pot of water for about 5 minutes to remove excess fat. Let them cool slightly before slicing diagonally. If the sausages have casings, remove them after cooking and before slicing. Finely dice the onion, celery, carrot, and mince the garlic. Heat a heavy-based pan on the stove with a thin film of olive oil. Sauté the diced vegetables over moderate heat until the onions have softened. Stir in the curry powder and let it bloom for about 1 minute. Adjust the amount to suit your desired level of spiciness.
