Biryani Masala Recipe:

Batch 1:

Fennel Seeds - 2 tbsp
Star Anise - 2 nos
Cumin Seeds - 1 tsp
Cardamom - 6 nos
Cloves - ½ tsp
Cinnamon (1-inch piece) - 3 nos
Black Peppercorns - 10 nos
Coriander Seeds - 3 tbsp

Batch 2:

Black Cardamom - 3 nos
Nutmeg - 1 no
Marathi Moggu / Kapok Buds - 5 nos
Dried Red Chilli - 5 nos
Bay Leaf - 2 nos
Mace - 2 nos
Kalpasi / Stone Flower - 1 tsp

Cooking Instructions:

1. Toast all the ingredients in Batch 1 until they turn aromatic (around 2 minutes) on low heat. Remove from the pan and set aside.

2. In the same pan, add the black cardamom, nutmeg and Marathi Moggu. After 30 seconds, add the dried red chillies, bay leaves, mace and kalpasi. Cook for 1 more minute. Remove from the heat.

3. Grind all the spices together into a fine powder.

4. Store in an airtight container for up to 3 months.
