Ingredients :
Basmati Rice - 1 kg
Ghee - 3 tbsp

Onion Mixture :
Onion - 400 g
Cinnamon - 3.6 g
Cardamom - 2.5 g
Clove - 1.2 g

Tomato Mixture
Tomato - 400 g
Curd - 100 g
Ginger Paste - 100 g
Rock Salt - 42 g
Mint Leaves - 30 g
Coriander Leaves (chopped) - 30 g
Green Chilli - 62 g

Other Ingredients:
Groundnut Oil - 200 ml
Garlic Paste - 75 g
Red Chilli Powder - 11 g
Water - 1200 ml
Mutton (biryani cut) - 1.5 kg

For cooking rice :
Water - As Needed
Salt - As Needed


Instructions:
Prep -
Soak the basmati rice for 30 minutes to 1 hour (maximum).
Slice onions thinly. To the onions, add cinnamon, cardamom and cloves.
Slice the tomatoes. Add it into a bowl along with curd, ginger paste, rock salt, mint leaves, coriander leaves and green chilli.
Cooking the masala
Heat oil and add the onions. Saute until golden brown.
Add garlic paste and red chilli powder. Saute lightly for 20-30 seconds.
Add the tomato mixture. Saute until the tomatoes soften.
Add water, cover and boil for 10 minutes.
Add the mutton, cover and cook on medium-low heat for 45 minutes.
Cooking the rice
Bring water to a boil. Add salt and then the rice. Cover and cook for a total of 5 minutes.
Strain out the rice. Save the excess water in a large bowl.
Dum process
Add the strained rice to the mutton. Spread the rice around and make holes in the rice using the back of a ladle (as to not break the rice).
Some of the water should be visible from the top, just below the level of the rice. If needed, add some of the remaining water from earlier.
Cover with a lid. Place the bowl of the hot water on top and cover that with a lid.
When steam starts coming from the sides, reduce the flame to low and keep on dum for 15 minutes.
Remove the lid and carefully mix from the sides. Drizzle the ghee around the rice. Serve with onion raita and brinjal curry.


Cooking Tips:
Refined oil can be used, but groundnut oil can be used for more flavour.

Cook the rice simultaneously while the mutton is cooking, so that the rice is still hot while adding it to the rice for dum. This way, it will cook evenly.
