🛒 Ingredients (6 servings) (28x18 cm / 11x7 in pan on the inside):

🔸 1 kg potatoes (2 lb)
🔹 750 g fresh spinach (1.5 lb)
🔸 90 g diced Prosciuto (½ cup / 3.2 oz)
🔹 1 onion
🔸 Salt
🔹 2 eggs L
🔸 100 g gratin cheese (I used gouda) (1 cup / 3.5 oz)
🔹 1 tbsp bread crumbs

Bechamel sauce:

🔸 400 ml milk (1 ⅔ cup / 14.2 fl oz)
🔹 35 g all-purpose flour (¼ cup / 1,2 fl oz)
🔸 35 g butter (2 ½ tbsp / 1.2 fl oz)
🔹 30 g grated aged cheese (I used Grana Padano) (¼ cup / 1 oz)
🔸 Pepper
🔹 Nutmeg

🍳 Directions:

1️⃣ Boil the potatoes whole and in their skins. Let them warm. Peel them, mash them with a potato masher to make a puree. Add salt and pepper to taste; mix. Stir in the two beaten eggs. Set aside.
2️⃣ In a large skillet, add a little oil and cook the spinach, adding it in batches until it has reduced in volume. Put them in a colander and press them with a spoon to remove as much water as possible. Then, grind them with your food processor.
3️⃣ Finely chop the onion. Sauté it in a pan with a couple of tablespoons of olive oil and a little salt. Cook over low heat until it is very soft.
4️⃣ Mix the spinach with the onion and add the diced prosciuto. Cook everything for a couple of minutes.  
5️⃣ Prepare the béchamel sauce. Put the butter in a saucepan over low heat. When it is melted, add the flour and cook, stirring constantly, for 2 minutes. Pour in the hot milk. Continue stirring until it thickens. Stir in the grated cheese and add a little pepper and nutmeg.
6️⃣ Mix the béchamel sauce with the spinach.
7️⃣ Brush the base of an ovenproof dish with a little oil and sprinkle with a tablespoon of breadcrumbs. Spread half of the mashed potatoes, then half of the spinach. Cover with another layer of mashed potatoes and finish with the rest of the spinach. Cover with grated cheese and bake at 180 ºC (350 ºF), heat up and down, until the cheese is golden brown.
8️⃣ Let warm for a few minutes before serving.

👌 Note: I do not add salt to the spinach and béchamel, as the diced ham gives enough flavor.
