How to cook Cajun boiled peanuts

This is a great recipe for authentic Cajun  boiled peanuts, and this recipe is spot on!  The goobers where perfectly seasoned with Joe's instructions.

NOTE!  This recipe is for fresh "Green" peanuts!  Not for dried or raw peanuts.  The cooking time is a lot greater for dried or raw peanuts.

Spice ingredients  for 1 gallon of water.  I used 2 gallons of water to cook these 3 pounds of peanuts, so just double the spices for every gallon of water you use to cover peanuts plus two inches.

1 Tablespoon of powdered cayenne pepper
1 Teaspoon of white or black pepper
1 Teaspoon of garlic powder
1 Bay leaf
1 Teaspoon of sweet basil
½ cup of salt
½ cup of powdered crab boil (Zatarains, Slap Ya Momma, Swamp Fire, etc.)
4 oz's of diced jalapeño peppers

Instructions:

Pour the fresh green peanuts into the pot and mark how much water you will need to cover the peanuts by 2 inches.  Remove peanuts, and add in the amount of water needed.  Heat water to a rolling boil, and then add in all the spices for the amount of water used, and then the peanuts.  Once the peanuts are back up to a full boil, reduce heat, and let simmer for 1 hour.  At the end of 1 hour, do a taste test on a few of the larger peanuts.  You want them to be a little al dente.  If they need more cooking time to reach this stage them let them go longer.  Once you are pleased, then cover pot, and turn off the heat (fire) and let sit.  The peanuts will continue to cook in this hot water even though the flame has been turned off.  They will also begin to sink and and absorb the Cajun spiced liquid.  At the end of two hours, the peanuts should be just right, but do a test taste and make sure.  If not, let them continue to soak until they are where you want them. Drain peanuts in a colander, and place into freezer bags to freeze, or to refrigerate, or eat now while still hot.   Enjoy!!!
