Chicken & Peanut Sauce - Pollo Encacahuatado

If you love peanuts, you will love this recipe for chicken in a spicy peanut sauce called "pollo encacahuatado." Prepared with roasted peanuts and a variety of dried chiles and spices.


Ingredients for chicken broth:

Instead of frying the chicken as I did in the video, boil the chicken with garlic, onion, celery, Hoja Santa (if you can't find hoja Santa use cilantro or bay leaves), and salt.
