Do you like yuzu among citrus fruits?
Today, I'm going to try making a delicious citron madeleine with zero failure rate.

I like yuzu, which has a slightly richer feel than lemon.
However, it is not easy to use yuzu as a raw fruit for all baking.
So today, I tried yuzu preserves, which is easily available.
It was so easy to make and tasted so good because the hassle of cleaning the fresh fruit disappeared.

▶Ingredients

★Mold size 77 X 50 X 22 mm★

100g Eggs
100g Unsalted butter
90g Sugar
50g Yuzu preserves
90g Cake flour
30g Almond flour
4g Baking powder
2g Vanilla extract
1g Salt

100g Powdered sugar
20g Yuzu preserves20g
15g Lemon juice






▶How to make

1. Lightly mix eggs and vanilla extract at room temperature.
2. Add sugar, salt and yuzu preserves and mix.
3. Add almond flour and cake flour and mix until no raw flour is visible.
4. Add melted butter and mix well.
5. Refrigerate the finished dough for at least 1 hour.
6. Fill about 80% of the mold with the dough.
7. Bake in a preheated oven at 180℃ (356℉) for 15 minutes.
