A 🍰 Join me in making the easiest Fluffy Japanese Cheesecake! Light as air and super delicious, this recipe is perfect for beginners and cheesecake lovers alike. 🌟I am generally following the recipe from Just One Cookbook. Check out the original recipe on the Just One Cookbook blog for details.

Ingredients:

• 6 large eggs, separated
• 300g cream cheese, softened
• 60g sugar for cream cheese mixture + 100g sugar for mixing egg whites
• 200ml whipping cream
• 80g cake flour
• 30ml lemon juice
• 15g butter to grease the pan + 60g butter

Instructions:

      1. Preheat oven to 320°F (160°C). Butter and flour a 6-inch cake pan.
2. In a bowl, mix cream cheese, half the sugar, and milk over a water bath until smooth.
3. Remove from heat. Mix in egg yolks, flour, and lemon juice.
4. In another bowl, beat egg whites while gradually adding remaining sugar, until stiff peaks form.
5. Gently fold egg whites into cream cheese mixture.
6. Pour into the pan. Tap to release air bubbles.
7. Bake in a water bath for 70 minutes, then at 300°F (160°C) for 10 minutes.
8. Turn off the oven, leave the door ajar, and let the cake cool.
9. Chill before serving. Enjoy your cloud-like cheesecake! 😊
