Healthy and delicious EGGPLANT salad 🍆

The easiest most delicious recipe! Definitely one of my favourites with Aubergine / Eggplant or Baingan!!
Lets GO!
For The Eggplant cream :
2 large eggplant
100gm yogurt
2tbsp lemon juice
2 tbsp garlic
1tbsp oil
1tbsp mustard

For the salad :
Lettuce leaves
Baby Spinach
1 Indian Avocado
3tbsp olive oil
1/4 cup lemon juice
Basil leaves
Parsley
chives

To garnish :
Almonds
flax seeds
sunflower seeds
chilli flakes
Sourdough bread
