Fully Loaded Buddha Bowl - with Veggies, Paneer and Red Rice

Did you know - Sweet potatoes are an excellent source of highly absorbable beta carotene, which your body can convert into vitamin A??
And, Did you know there are over 40,000 varieties of Rice in India!!!!
So this is a beautiful representation of Biodiversity on a plate.. well a bowl here!! This Buddha bowl is absolutely delicious! Its a great way to get a few veggies, a different variety of rice and some protein from paneer!

Buddha bowl
For the rice:
Red rice / black rice 1cup
Sesame seeds - black and white to sprinkle

For the paneer:
Paneer 1 pkt (200gm)
Cornflour 1tbsp
Oil for frying

Sweet potato 1
Salt and pepper to taste
Butter 2tbsp

Carrot 1
Pineapple 1
Chilli powder 1tsp

Cucumber 1no
2tbspSesame oil
1tbsp Garlic
1tbsp Vinegar
1/2tsp Chilli flakes
1tbsp sesame seeds
1tbsp Sugar
spring onions to garnish  

Peanut coconut sauce:
Peanut butter 2tbsp
Coconut milk 1/2 cup
Maple syrup / honey 2tbsp
Garlic 1tbsp chopped
Red chilli powder 1tsp
Lime juice 1tbsp
1tsp rice wine vinegar

So technically 5 recipes in 1!
