MEETHE CHAWAL
CHEF AANAL KOTAK
PREP TIME: 30-40 mins
COOKING TIME: 30-35 mins
INGREDIENTS:
• 1 1/2 cup rice
• Water as required
• 2 tbsp ghee
• 3-4 nos. cloves
• 3 nos. cardamon
• 1 inch cinnamon stick
• 1 nos. black cardamon
• 8-10 slice fresh coconut
• 8-10 nos. almonds (chopped)
• 8-10 nos. cashew (Split in half)
• 1 tbsp raisins
• 2 cup water
• Salt as per taste
• 1 cup sugar
• 1 tsp saffron strands
• 2-3 drops orange food colour (Optional)
• fresh grated coconut (for garnish)
METHOD:
• Take rice in bowl and wash it well till water turns clear. Then soak it for 15- 30 minutes in water.
• Now set a cooker on high heat, add ghee, along with cloves, cardamon, cinnamon stick, black cardamon and fresh coconut slices. Give this a mix.
• Further add almonds, cashew, raisins, mix and roast the nuts for 2-3 minutes.
• Strain the water from the soaked rice and add the soaked rice to it, stir well and cook the rice in ghee for 2-3 minutes on low flame.
• Add water along with salt and sugar, saffron strands, and food color, and stir till sugar dissolves.
• Further, cover the lid on and cook it over on high flame for 1 whistle and then lower the flame and cook for 10-12 minutes.
• Once cooked switch off the flame and let it depressurize naturally.
• As cooker depressurized, open the lid, transfer the chawal on serving bowl and garnish it with fresh grated coconut.
