Vagharela Bhaat

Ingredients for Garlic Chutney:

1 tbsp Garlic (chopped)
1 tsp Red chili powder
1 tsp Cumin powder
Salt to taste
1 tsp Oil

Ingredients for Vagharela Bhaat:

2 tbsp Oil
1 tsp Mustard seeds
1 tsp Cumin seeds
Pinch of Asafoetida (hing)
1 inch Cinnamon stick
2 Bay leaves
1 Star anise
8 to 10 Curry leaves
1 tbsp Green chili (chopped)
1 tbsp Garlic (chopped)
1 tbsp Garlic chutney (prepared)
9 to 10 Baby onions
6 to 7 Baby potatoes
1/2 cup Green peas
1/2 cup Tomato (julienned)
1 cup Rice (soaked and boiled)
1/2 tsp Turmeric powder
1 tsp Red chili powder
1 tsp Coriander powder
1 tsp Cumin powder
Salt to taste
Water as required
For Garnishing:
Ghee
Method for Garlic Chutney:

Combine the chopped garlic, red chili powder, cumin powder, salt, and oil.

Grind the mixture into a smooth chutney using a mortar and pestle.

Method for Vagharela Bhaat:

Heat oil in a pressure cooker.

Add mustard seeds and cumin seeds, and let them splutter.

Add a pinch of asafoetida, cinnamon stick, bay leaves, star anise, curry leaves, and chopped green chili.

Add the chopped garlic and garlic chutney, sauté until fragrant.

Add baby onions, baby potatoes, green peas, and julienned tomatoes. Mix well.

Add the soaked and boiled rice to the cooker and mix thoroughly.

Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well.

Add water as required and mix again.
Close the lid of the pressure cooker and cook until you hear one whistle.

Once the pressure cooker cools down, carefully open the lid.

Transfer the vagharela bhaat to a serving bowl.
Garnish with ghee on top before serving.
