Today I will show you how nocino is prepared in my house.
For those who don't know, nocino is a liquor that is made using walnuts that are still unripe and covered by the husk, the green pulp that covers the fruit. It is prepared in the summer and ready in the winter months.
Legend has it that "the walnuts were picked on St John's night by the woman most skilled in their preparation, who climbed the tree barefoot and plucked only the best walnuts, using only her hands and without ruining the peel".
Not knowing the most experienced woman, we did it ourselves.
We picked the walnuts on the night of St John's Day, the night between the 23rd and 24th of June. We needed 38 walnuts, but just to be safe we picked a few more.
For the next day's preparation we need:
- 38 walnuts
- the peel of 3 untreated lemons (only the yellow part)
- two cinnamon barks
- 10 cloves
- 1 litre of 95° alcohol for food use

 The syrup is prepared with 1.2 litres of water and 1.8 kg of sugar.

I can guarantee that it is delicious and has an intense, full-bodied taste. It is an ideal liqueur for the winter months and is a good digestive due to the presence of tannins in the husk.
