A terrific demonstration of traditional guacamole recipe at Restaurante Nicos in Mexico City, with Chef Gerardo Vazquez Lugo, and Iron Chef America winner Rob Feenie.
Chef Gerardo Vazquez Lugo is founder of Slow Food Mexico, part of the global movement that seeks to preserve regional culinary heritage and educate people about the origins of their local food culture.
The combination of locally sourced ingredients and recipes from his mother that go back generations make his food really stand out from its competitors. Chef Vazquez Lugo has been professor at many gastronomic schools in Mexico, Latin America and Europe mainly promoting the richness of the Mexican Cuisine and at the same time supporting the effort and great work of small growers and farmers.
Chef Feenie has published three cookbooks, starred in New Classics with Rob Feenie on Food Network Canada, and in 2005 was the first Canadian to win on the popular television show Iron Chef America defeating Chef Masaharu Morimoto.
