Sweet potato gulab jamun is popularly known in Bengal is one heavenly dessert that make good use of superfood.

INGREDIENTS:

Sweet potato(boiled and grated)     1 cup
Khoya    1 tbs
All purpose flour 1 tsp
Cooking soda 1 pinch
Cardamom powder   2 pinch
Oil  To fry
Sugar syrup    1 ½ cup

METHOD:

1. Boil sweet potato but it should not be mashy, remove the skin and grate it into a bowl..

2. Take a mixing bowl, add sweet potato and knead it well without any lumps.

3. Add khoya, all purpose flour, cooking soda, cardamom powder and knead it perfectly.

4. Divide into equal portions and make roundels without any cuts.

5. Heat oil in a pan, place the jamun and mix it with wooden spoon like as shown in video on slow flame until slightly golden in colour.

6. Transfer hot fried jamun into slightly hot sugar syrup with cardamom powder and allow it rest for 1-2 hours.

7. Now sweet potato gulab jamun is ready to serve.
